Chocolate Chip Cookie

Whisk sugars and browned butter until combined

100g sugar, 150g brown sugar, 113g browned butter

Whisk in the egg and egg yolk until combined

Whiskkkkk in salt, baking soda and vanilla

5g salt, 1g baking soda, 10g vanilla extract

Fold in 103g AP flour

Fold in the second 103g AP flour

Don't over mix

Fold in the chopped chocolate

85g milk chocolate, 100g 60% dark chocolate

Roll into a 2.5" diameter log with plastic wrap

Fridge overnight

Every 1/3 of the way through baking, pick up the tray and drop it down

Looking for golden edges and a slightly underdone, matte center

Flaky salt on top
